Solanum tuberosum 'Purple Viking' is a delicious, multipurpose edible potato with lavender blooms, smooth purple skin, and white flesh. Said to produces huge yields with varying sizes depending when harvested. Adaptable in a variety of soils, however will produce more in nice loose sand or silt. Also can be grown in large pots. Plants are small enough to interplant with other vegetables. Plant in early spring while soil is still cool. Hilling up potato plants will increase yields. Matures within 80-100 days.
